Missing Grammy and Grandpa

I've been really missing my grandparents lately. When Salvatore died and we went to the church for the funeral mass I wept like a baby, it was the first time I had been in the catholic church since they died. They played all the same music, Ave maria, let there be peace on earth, etc. It took all my strength not to run out of the church, it was like they had both just died.

Fish stew


[q] Quick, easy, and absolutely delicious fish stew! Fresh fish fillets cooked in a stew with onions, garlic, parsley, tomato, clam juice and white wine. Seasoned with oregano, Tabasco, thyme, salt and pepper.

Prep time: 10 minutesCook time: 25 minutesYield: Serves 4

INGREDIENTS6 Tbsp olive oil1 cup of chopped onions2 large garlic cloves, chopped2/3 cup fresh parsley, chopped1 cup of fresh chopped tomato (about 1 medium sized tomato)2 teaspoons tomato paste8 oz of clam juice (or shellfish stock)1/2 cup dry white wine (like Sauvignon blanc)1 1/2 lb fish fillets (use halibut, cod, red snapper, or sea bass), cut into 2-inch piecesTouch of dry oregano, Tabasco, thyme, pepperSalt

METHOD

1 Heat olive oil in heavy large pot or Dutch oven over medium-high heat. Add chopped onion and garlic and sauté 4 minutes. Add parsley and stir 2 minutes. Add tomato and tomato paste, and gently cook for 10 minutes or so.

2 Add clam juice, dry white wine, and fish and simmer until fish is cooked through, less than 10 minutes. Add seasoning. Salt to taste. Ladle into bowls and serve.

mice


Mike and I had a mouse infestation, I successfully sealed up where they were coming in and thankfully never ended up catching one in the mouse electrocution chamber. I did use this parsnip tail to scare Mike though. it was my first time roasting root vegetables, I always thought I hated beats until I had them roasted and now I love them.

New glass block windows!


I know this doesn't seem like much but a lot of time and thought and dollars went into these windows. I'm so happy to finally have them, they let in light, keep out the cold wind, squirrelly mice and terrifying killers.

water bill


I'm surprised our first bill averages out to 45/mo. what are all these penalties on the bill? what did I do wrong that I need to be penalized? I've never paid directly for water before and I wonder how our usage compares, I don't think I use a lot of water.

Dying to make a will

Yeah, So I was going to have a will drawn up tomorrow but we're supposed to get all this snow right when I have to go the stupid burbs and all over the city. I'm canceling my appointment, wouldn't that be crazy if I died going to get my will?

In case you are wondering, it's going to (e:Mike). I'm being buried in a pine box right away without embalming...I like forest lawn if they are still doing the green burial.
